Omelet Biscuits

Ingredients:
For the Omelet:
4 large eggs
1/4 cup milk
Salt and pepper to taste
1/2 cup diced bell peppers (assorted colors)
1/2 cup diced onions
1/2 cup diced tomatoes
1/2 cup shredded cheese (cheddar or your choice)
2 tablespoons chopped fresh chives or parsley
2 tablespoons butter or cooking oil
For the Biscuits:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, cold and diced
3/4 cup buttermilk
Instructions:
1. Preheat Oven:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. Prepare Biscuit Dough:
In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Add the cold, diced butter and use a pastry cutter or your hands to incorporate the butter into the flour until it resembles coarse crumbs. Pour in the buttermilk and stir until just combined. Do not overmix.
3. Shape and Bake Biscuits:
Turn the dough out onto a floured surface. Gently knead it a few times, then pat it into a 1-inch thick rectangle. Use a round biscuit cutter to cut out biscuits. Place them on the prepared baking sheet and bake for 12-15 minutes or until golden brown.
