Fit Carrot Cake Recipe

Ingredients
2 grated raw carrots
5 eggs
4 tablespoons of coconut oil (or other)
1/2 cup demerara sugar (or other)
2 cups oats
1 tablespoon baking powder
Method of Preparation

Preheat your oven to 210 degrees Celsius. Grease a baking pan and set it aside.
Blend grated carrots, eggs, coconut oil, and demerara sugar until well combined and smooth.
Gradually add oats to the mixture while blending, ensuring a smooth and homogeneous dough consistency.
Incorporate baking powder into the mixture and blend until evenly distributed.
Pour the batter into the greased pan, spreading it evenly.
Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
