Place the butter in a bowl until soft.
Add the sugar and beat until creamy.
Season with vanilla essence and lemon zest.
Add the egg yolks one at a time and mix well.
Add the cornstarch and sift it with the baking powder if possible.
Form a small loaf, trying to touch the dough as little as possible.
Wrap in foil and place in the fridge for 30 minutes.
Then stretch the dough with a rolling pin on a floured table until it is ½ cm thick and, using a biscuit cutter (cookie cutter) or if not, cut out discs of the desired size (usually they are 4 or 5 cm in diameter). I have one with the opening of a glass. Remember that they grow as you cook them.
Arrange the slices on a buttered plate with some space between them to prevent them from sticking together.
Preheat the oven to around 200°C and bake the slices for 5 minutes, until lightly golden brown. It is important not to overcook them.
Once cooked, carefully remove the slices from the plate with a spatula and allow them to cool before assembling them.
