Chicken and Shrimp Spring Rolls

 

The preparation of chicken and shrimp spring rolls is an art that combines precision and creativity. Follow these steps to create this culinary delight.

Preparation of the Stuffing
Mixing of the ingredients: In a large bowl, combine the ground chicken, shrimp, drained and chopped rice vermicelli, black mushrooms, grated carrot, minced onion and garlic. Mix well.
Seasoning: Add the nuoc-mâm, sugar, and a good pinch of black pepper. Toss again so that all the ingredients are evenly coated.
Adding the egg: Stir the beaten egg into the mixture. It will serve as a binder to keep the stuffing compact when rolling the spring rolls.

: Briefly soak each rice cake sheet in warm water to soften them. Spread them out on a clean kitchen towel.
Rolling the egg rolls: Place a good tablespoon of stuffing on the bottom edge of each sheet. Roll up firmly, folding the sides over to enclose the stuffing and form a tight roll.
Cooking the spring rolls
Deep-frying: Heat the frying oil to about 180°C. Fry the egg rolls in small batches so as not to lower the temperature of the oil. They should be golden brown and crispy, this takes about 5-7 minutes.
Draining: Drain egg rolls on paper towels to remove excess oil.
Mixing
the ingredients: In a small bowl, mix the hot water, sugar, rice vinegar, nuoc-mâm until the sugar is completely dissolved. Add the minced garlic and chilli.
Serve
the spring rolls hot with the accompanying sauce, lettuce leaves, and fresh herbs such as mint or Vietnamese basil. The egg rolls can be rolled up in lettuce and dipped in the sauce for a complete taste experience.
