So there are only two ingredients: 3 litres of milk and the juice of two lemons . Here are all the steps to follow to make your homemade ricotta:

Boil 1.5 litres of fresh milk in a steel pan with salt to obtain the first salt.
As soon as the milk begins to boil, add the juice of 1 lemon and whisk.
After a few minutes the whey will start to separate and it is time to remove it from the heat and let it stand for 5 minutes.
Then take a strainer with a gauze or a cotton cloth and filter first the whey and then the larger part. This way you will get the primova. The tip is to shape it by pressing it also to remove the last residues of serum.
Once the primosale is obtained, you can proceed with the ricotta by heating the whey with another 1.5 L of milk and the juice of 1 lemon.
