4 boneless, skinless chicken breasts
1 cup creamy Caesar dressing
1/2 cup chicken broth
1 cup sliced mushrooms
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon black pepper
1/2 teaspoon salt
1/4 cup chopped parsley for garnish
Directions
1. Place the chicken breasts at the bottom of the slow cooker.
2. In a bowl, mix together the creamy Caesar dressing, chicken broth, grated Parmesan cheese, minced garlic, salt, and pepper.
3. Pour the mixture over the chicken in the slow cooker.
4. Scatter the sliced mushrooms on top of the chicken.
5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
6. Garnish with chopped parsley before serving.
Variations & Tips
To add a bit more texture and flavor to the dish, consider adding some chopped sun-dried tomatoes or olives into the sauce. For an extra cheesy flavor, try mixing in some shredded mozzarella during the last 30 minutes of cooking. If you prefer a bit of a crunch, sprinkle some croutons on top just before serving. Adjust the type of mushrooms used based on availability or preference; shiitake or porcini mushrooms would make decadent alternatives.
