Fried noodles with vegetables and breaded chicken

Cook the pasta according to package instructions, drain and set aside.
Salt and pepper the chicken breast fillets. Then coat each fillet first in flour, then in the beaten eggs and finally in the breadcrumbs.
Heat a pan with enough vegetable oil and fry the breaded chicken breast fillets until golden brown and cooked through. Drain on kitchen paper.
Heat the vegetable oil in a large pan or wok. Add the minced garlic and sauté briefly until fragrant.
Add the vegetables (peppers, carrots, onion, broccoli) and stir-fry over medium heat until the vegetables are slightly crispy but still firm to the bite.
Add the cooked pasta to the pan and mix well. Add soy sauce and continue frying until everything is heated through.
Season with salt and pepper. Add more soy sauce if necessary.
Divide the fried noodles onto plates and serve with the breaded chicken breast fillets.
Garnish with fresh coriander or spring onions if desired.
