Prepare the dried apricots:
Place the dried apricots in a bowl and cover with cold water. Let them soak for 15-20 minutes so that they absorb moisture again.
Drain the water and cut the dried apricots into small pieces.
Prepare the nuts and seeds:
Chop the walnuts with a knife.
In a large mixing bowl, combine the chopped walnuts, hazelnuts, pumpkin seeds, sunflower seeds, seseeds, flaxseeds, almonds and pine nuts.
Mix ingredients:
Add the chopped dried apricots to the nut and seed mixture.
Pour in 40 ml of natural honey and add 1 egg white.
Add a pinch of salt.
Mix well until all ingredients are evenly combined.
Shape the cookies:
Preheat your oven to 360°F (180°C).
Line a baking sheet with baking paper.
Using your hands, form small cookies from the mixture and place them on the prepared baking sheet.
Bake: Bake in the preheated oven for 15–20 minutes,
or until the cookies are golden brown and firm.
Cool and serve:
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Place the cookies on a wire rack to cool completely.
