INSTRUCTIONS :

 

  • Prep grill to medium-high or oven to 200°C (400°F).
  • In a large bowl, combine thinly sliced ​​potatoes, sliced ​​onion, minced garlic, olive oil, dried thyme, dried rosemary, salt and pepper. Toss everything together until the potatoes and onions are evenly coated in the oil and seasoning.
  • Tear four large pieces of aluminum foil, each about 12 inches long. Place a portion of the potato mixture in the center of each piece of foil, dividing it equally between them.
  • Fold the sides of the foil over the potatoes, creating a packet. Remember to close the edges well to prevent any juices from escaping during cooking.
  • Place the foil packets directly on the grill racks or on a baking sheet if using the oven.
  • Cook the foil packets for about 20-25 minutes on the grill or 30-35 minutes in the oven, or until the potatoes are tender and cooked through. You can carefully open a package to check for doneness.
  • Once the potatoes are cooked, carefully open the foil packets (watch out for the steam) and transfer the contents to a serving dish.
  • If desired, sprinkle some shredded cheese, chopped bacon or fresh herbs over the potatoes for an added flavor boost.
