S’mores Cookies

Cream 1 cup unsalted butter with ½ cup brown sugar and 1 cup granulated sugar in a stand mixer or using a hand mixer until smooth and well combined.
Add 2 large eggs and 1 teaspoon vanilla extract, mixing until incorporated.
Turn off the mixer. Add 2¾ cups flour, 1 teaspoon baking soda, 1 teaspoon salt, and 2 cups chocolate chips. Pulse the mixer on and off quickly until just combined. The dough will be thick.
Using a spatula, fold in 1 cup Golden Grahams cereal (or chopped graham crackers) and 1½ cups mini marshmallows until evenly distributed. Do not use the mixer for this step.
Shape and Bake:

Use a large cookie scoop or spoon to shape the dough into 18 balls (about the size of golf balls). Place them on parchment-lined cookie sheets, 6 cookies per sheet.
Bake in the preheated oven for 7-8 minutes.
Add Marshmallows and Chocolate:

Remove cookies from the oven. Place one half of a large marshmallow on each cookie.
Return to the oven and bake for an additional 2 minutes.
Remove from the oven again. If needed, slightly flatten the cookies.
Place 1-2 rectangles of Hershey Bar on top of each marshmallow.
Bake for another 1 minute.
Finishing Touches:

Remove from the oven for the last time. Use a knife to spread the melted chocolate over the marshmallow if desired, or leave the chocolate as is to showcase the Hershey’s logo.
Cool and Enjoy:

Let the cookies cool slightly before transferring to a wire rack to cool completely.
