Stir-fried chicken with vegetables

Season the chicken pieces with salt, pepper, paprika, and dried thyme.

In a large skillet or wok, heat the olive oil over medium-high heat.

Add the chicken pieces to the hot pan and cook until browned and cooked through, about 5-7 minutes. Remove them from the pan and set them aside.

In the same skillet, add a little more olive oil if needed, then add the minced garlic and minced onion. Sauté them for a few minutes until tender and fragrant.

Add the peppers, zucchini, carrot and mushrooms to the pan. Sauté the vegetables for about 5-7 minutes, until slightly tender but still crunchy.

Return the chicken pieces to the pan with the vegetables.

Add the soy sauce, Worcestershire sauce, and tomato sauce to the pan. Stir well to coat all the ingredients in the sauce.

Simmer for a few minutes to allow the flavors to blend and to warm up the chicken.

Taste and adjust seasoning with salt and pepper as needed.

Serve the stir-fried chicken with vegetables hot, accompanied by cooked rice, pasta or toast, depending on your preference.

You can also top the stir-fried chicken with a little chopped fresh parsley before serving for an extra touch of freshness.
