3. In a sizable bowl, mix the chopped broccoli with the following ingredients: breadcrumbs, cheddar, Parmesan, eggs, flour, garlic powder, and onion powder. Before mixing everything together, add the salt and pepper.
4. Roll the dough into little balls, each about an inch across, and set them on the baking sheet that has been preheated.
5. Put the cheese balls in the oven and bake for 20 to 25 minutes, or until they turn brown and feel firm when touched.
6. Be careful, they are hot; wait a few minutes before serving.

Tips and Variations – To make it gluten-free, use a gluten-free substitute to breadcrumbs or grind some rolled oats into a coarse meal. – Feel free to experiment with various cheeses. A little pepper jack cheese gives it a kick, and mozzarella may give it a great stretchiness.
– You can create these lovely treats in advance and store them in the freezer with no problems at all. Making the balls couldn’t be easier; just roll them into balls, put them on a baking sheet, and freeze until frozen. Then, pop them into a freezer bag. To bake them from frozen, just add a few minutes to the cooking time when you’re ready.
– Additionally, you may add extra vegetables by including finely chopped spinach or shredded carrots. You’ll get a lot more broccoli for your money this way!
