I’m hounded by my family to make this all the time, but hey, it’s seriously simple!

– 1 1/2 pounds sirloin steak, cut into 1-inch cubes
– 2 tablespoons olive oil
– 3 tablespoons butter
– 2 teaspoons fresh rosemary, minced
– 2 teaspoons fresh thyme, minced
– 2 cloves garlic, minced
– Salt and pepper to taste
For the Potato Foil Packets:
– 2 pounds baby potatoes, halved or quartered
– 1/2 cup heavy cream
– 4 cloves garlic, minced
– 2 teaspoons onion powder
– 1 teaspoon dried thyme
– 1/2 cup shredded Parmesan cheese
– 4 tablespoons butter, cut into pieces
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
Directions
1. Preheat your grill to medium-high heat or your oven to 400°F if you prefer to bake.
2. In a bowl, toss the potatoes with the heavy cream, minced garlic, onion powder, dried thyme, Parmesan cheese, and a pinch of salt and pepper.
3. Lay out four large pieces of aluminum foil and evenly divide the potato mixture among them. Top each with a tablespoon of butter.
4. Fold the foil over the potatoes to create a sealed packet. Grill or bake for 20-25 minutes, or until the potatoes are tender.
5. While the potatoes are cooking, season the steak bites with salt and pepper.
6. Heat the olive oil in a large skillet over medium-high heat. Add the steak bites, cooking for 4-5 minutes until they are seared and browned on all sides.
7. Lower the heat to medium, add the butter, garlic, rosemary, and thyme to the skillet. Sauté for an additional 2-3 minutes, constantly spooning the herb butter over the steak bites.
8. Once the steak bites are glazed and the garlic is fragrant, remove from heat.
