Lemon Garlic Lobster Tails 😍

Ingredients:

For the Lobster Tails:

4 lobster tails (5-6 oz each)
1 Tbsp fresh parsley, finely chopped (plus more for garnish)
2 garlic cloves, pressed
1 tsp Dijon mustard
¼ tsp salt
⅛ tsp black pepper
1 ½ Tbsp olive oil
1 ½ Tbsp fresh lemon juice
4 Tbsp unsalted butter, divided

Directions:

Prepare the Lobster Tails:
1.1. Preheat your oven to 425°F (220°C) and line a baking sheet with foil.
1.2. Using kitchen shears, cut the top shell of each lobster tail down the center, from the open end to the base of the tail. Pull apart the shell slightly and gently lift the meat to rest on top of the shell.
